Apricot Pancakes
Dairy Free and Gluten Free Rice Pancakes with apricot preserves spread on them
Ingredients
- 1/2 cup brown rice flour
- 1/2 cup tapioca flour
- 1 large egg
- 1/4 teaspoon cinnamon
- 1 tsp baking powder
- 2 tablespoons apricot preserves
- 1 tablespoon olive oil/canola oil
- 1/3 cup rice milk/soy milk
- 1 tsp margerine ( for frying pan)
- 1 tablespoon granulated sugar
Directions
- Step 1
Put butter in frying pan and turn heat on medium.
- Step 2
In a medium bowl add flours,sugar,egg,baking powder,cinnamon, oil, and rice milk.
- Step 3
Mix ingrediants together with a spoon.
- Step 4
Pour a 4 inch pancake onto frying pan and cook until golden.
- Step 5
After all the pancakes are made, put a layer of apricot preserves on top pancake in a stack, or a thin layer on each pancake.
- Step 6
Makes about 4-5 pancakes.
