Bette Hagman's Belgian Waffles

Nothing beats whipped cream and strawberries in the morning. However, to assuage your guilt, you need to put these goodies on something vaguely breakfast like, and these waffles do the trick perfectly. The waffle mix recipe can be found here: http://www.sprued.com/....

Ingredients

  • 1 1/3 cup waffle mix
  • 3 tablespoon shortening (i.e. crisco)
  • 1 tablespoon sugar
  • 2 eggs
  • 1 cup water

Directions

Step 1

Cut the shortening into the dry waffle mix, I like to use two forks for this step.

Step 2

In a separate bowl, lightly whip the eggs.

Step 3

Combine the dry mix with the eggs.

Step 4

Add water to the mixture until you have the correct consistency, which means the batter smoothly drips off a spoon. This may not take the whole cup of water, especially if your waffle mix uses rice flour from an Asian market.

Step 5

Put mix into a greased hot waffle iron and cook till golden brown (approximately 5 minutes for me).
