Lemon chicken
The herbs make this dish, but since we use different ones we just call it "lemon chicken."
Ingredients
- 6 T lemon juice = ~ 3 lemons squeezed
- 5 cloves garlic, minced
- 3 T olive oil
- 4 T minced fresh rosemary, basil, or tarragon
- 1 t ground cumin
- salt and freshly ground black pepper
- 4 boneless, skinless chicken breasts (1 lb.)
Directions
- Step 1
Mix together lemon juice, garlic, olive oil, fresh herbs, cumin, salt, and pepper.
- Step 2
Marinate chicken in this mixture for at least 2 hours, preferably overnight, in fridge.
- Step 3
Remove chicken from marinade and broil ~ 6 minutes on each side or longer if it's not cooked through.
