Lemon chicken

The herbs make this dish, but since we use different ones we just call it "lemon chicken."

Ingredients

  • 6 T lemon juice = ~ 3 lemons squeezed
  • 5 cloves garlic, minced
  • 3 T olive oil
  • 4 T minced fresh rosemary, basil, or tarragon
  • 1 t ground cumin
  • salt and freshly ground black pepper
  • 4 boneless, skinless chicken breasts (1 lb.)

Directions

Step 1

Mix together lemon juice, garlic, olive oil, fresh herbs, cumin, salt, and pepper.

Step 2

Marinate chicken in this mixture for at least 2 hours, preferably overnight, in fridge.

Step 3

Remove chicken from marinade and broil ~ 6 minutes on each side or longer if it's not cooked through.
