Chinese Style Chicken

This is a Cantonese specialty. Fix this dish ahead of time and serve it chilled over warm rice. If you are short on time you can use boneless skinless chicken pieces too.

Ingredients

  • 1 Chicken or chicken pieces
  • 1 T Wine (Rice wine is best, but white wine is fine too.)
  • 1 Green onion diced
  • 1 finger of freshly ground ginger
  • 2 T Olive Oil
  • Salt to taste

Directions

Step 1

Boil a large pot of water enough to cover the chicken.

Step 2

Add a full sized chicken and cook on high for 30 minutes.

Step 3

Take the chicken out and allow it to cool. (You can can save the broth for other recipes if you'd like.)

Step 4

Bone and skin the chicken.

Step 5

Sprinkle the chicken with wine and chill.

Step 6

Mix in the salt, ginger, green onions and olive oil in a separate bowl.

Step 7

Serve the chilled chicken with the dipping sauce and enjoy!
