Bette Hagman's Easy Pizza

This is a pretty good pizza crust, and it's pretty easy to make. I have to admit, it isn't a perfect substitute for its wheat based cousin, but with the right toppings, it works pretty well. The GF mix is 6 parts rice flour, 2 parts potato starch, and 1 part tapioca flour. If you want to try more of Hagman's recipes, here's a link to the book on Amazon: - http://www.amazon.com/...

Ingredients

  • 1 1/2 cups GF Mix
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon xanthum gum
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 7/8 cup lukewarm water
  • 1 tablespoon rapid-rising yeast
  • 1 egg or 1/4 cup liquid egg substitute
  • 1 tablespoon vegetable oil

Directions

Step 1

Preheat oven to 425 degrees

Step 2

Blend together the flour, baking powder, xanthum gum, and salt

Step 3

Add sugar to water, and stir in yeast. Let the yeast bubble a bit.

Step 4

Blend together the egg, oil, and yeast

Step 5

Beat in flour mixture

Step 6

Spread the batter into a 12" circle on a greased pizza pan. Try to leave raised edges.

Step 7

Allow to rise for 10 minutes (this never does much for me, but the book says to do it).

Step 8

Bake for 5 minutes. Pull out of the oven and add your toppings. Be careful not to use too much miranira sauce, since this will cause your toppings to slide off the pizza

Step 9

Bake for another 20-25 minutes or until your crust is golden brown.
