Aunt Mary's Old Fashioned Blueberry Cake

Delicious served warm with vanilla ice cream.

Ingredients

  • 1 stick butter
  • 1 cup buttermilk (or ½ cup sour cream thinned with ½ cup milk)
  • 1 cup GF flour (I used ½ c. white rice flour + ¼ c. potato starch flour + ¼ c. tapioca flour)
  • ½ tsp. xanthan gum
  • 1 cup sugar
  • ½ tsp. salt
  • 1 tsp. GF baking powder
  • ½ tsp. GF baking soda
  • 3 cups fresh blueberries mixed with ¼ cup sugar

Directions

Step 1

Preheat oven to 350 degrees.

Step 2

Melt butter and blend together with buttermilk (or sour cream/milk).

Step 3

Mix all dry ingredients together (except blueberries) and add to butter/buttermilk mixture.

Step 4

Pour mixture into greased 8” x 8” glass pan.

Step 5

Spoon the fruit on top.

Step 6

Bake 45-50 minutes or until done.
