Aunt Mary's Old Fashioned Blueberry Cake
Delicious served warm with vanilla ice cream.
Ingredients
- 1 stick butter
- 1 cup buttermilk (or ½ cup sour cream thinned with ½ cup milk)
- 1 cup GF flour (I used ½ c. white rice flour + ¼ c. potato starch flour + ¼ c. tapioca flour)
- ½ tsp. xanthan gum
- 1 cup sugar
- ½ tsp. salt
- 1 tsp. GF baking powder
- ½ tsp. GF baking soda
- 3 cups fresh blueberries mixed with ¼ cup sugar
Directions
- Step 1
Preheat oven to 350 degrees.
- Step 2
Melt butter and blend together with buttermilk (or sour cream/milk).
- Step 3
Mix all dry ingredients together (except blueberries) and add to butter/buttermilk mixture.
- Step 4
Pour mixture into greased 8” x 8” glass pan.
- Step 5
Spoon the fruit on top.
- Step 6
Bake 45-50 minutes or until done.
