Aunt Mary's Pineapple Upside Down Cake
Delicious served warm with vanilla ice cream and Aunt Mary's Quick & Easy Mixed Berry Sauce.
Ingredients
- 20-oz can sliced pineapple in juice, drained (reserve juice)
- 3 Tblsp. butter
- ¾ cup brown sugar, packed
- 1 stick butter
- ½ cup sour cream thinned with 1/2 cup milk or ½ cup reserved juice
- 1 cup GF flour
- ½ tsp. xanthan gum
- 1 cup sugar
- ½ tsp. salt
- 1 tsp. GF baking powder
- ½ tsp. GF baking soda
Directions
- Step 1
Preheat oven to 350 degrees.
- Step 2
Drain pineapple slices and place on a paper towel.
- Step 3
Place 3 Tblsp. butter in 9” round cake pan and place in oven until butter is melted, tilting pan so butter covers bottom evenly.
- Step 4
Sprinkle brown sugar over butter. (Do not pack down.)
- Step 5
Place pineapple slices on top of sugar.
- Step 6
Melt stick of butter and blend together with buttermilk (or sour cream/milk/juice).
- Step 7
Mix all dry ingredients together and add to butter/buttermilk mixture.
- Step 8
Pour batter into pan and spread evenly.
- Step 9
Bake 40-45 minutes or until done.
- Step 10
Remove from oven and slide a knife around sides of pan.
- Step 11
Let cool for three (3) minutes - invert a plate on top of pan and flip pan over so cake is resting pineapple side up on plate.
