Harold’s Best Banana Muffins

Ingredients
- 3 medium sized bananas, very, very, ripe
- ¾ cup sugar
- 1 egg, slightly beaten
- 1/3 cup oil
- 1 ½ cups Bette Hagman’s rice flour mix
- 1 tsp. Baking soda
- 1 tsp. Baking powder
- ½ tsp. Salt
- 1 tsp. Xantham gum
Directions
- Step 1
Mash the bananas, add the sugar and the slightly beaten egg. Mix well.
- Step 2
Add in the oil.
- Step 3
In a separate bowl add all the dry ingredients. Mix well.
- Step 4
Add the dry ingredients to the banana mix.
- Step 5
I add ½ cup of chocolate chips. You could also add ¼ cup raisins and ¼ cup walnuts.
