Harold’s Best Banana Muffins

Ingredients

  • 3 medium sized bananas, very, very, ripe
  • ¾ cup sugar
  • 1 egg, slightly beaten
  • 1/3 cup oil
  • 1 ½ cups Bette Hagman’s rice flour mix
  • 1 tsp. Baking soda
  • 1 tsp. Baking powder
  • ½ tsp. Salt
  • 1 tsp. Xantham gum

Directions

Step 1

Mash the bananas, add the sugar and the slightly beaten egg. Mix well.

Step 2

Add in the oil.

Step 3

In a separate bowl add all the dry ingredients. Mix well.

Step 4

Add the dry ingredients to the banana mix.

Step 5

I add ½ cup of chocolate chips. You could also add ¼ cup raisins and ¼ cup walnuts.
