Mint Forgotten Cookies

What's better than chocolate. Mint chocolate! This recipe is originally from the Celiac Sprue Association website (http://www.csaceliacs....).

Ingredients

  • 6 oz mint chocolate chips
  • 2 egg whites
  • 1/2 c pecans, finely chopped
  • 3/4 c sugar
  • 4 to 5 drops green food coloring
  • pinch of salt

Directions

Step 1

Turn oven to 350 degrees.

Step 2

Beat egg whites until stiff.

Step 3

Fold in sugar and salt.

Step 4

Add chocolate chips and pecans.

Step 5

Cover cookie sheet with aluminum foil, shiny side up.

Step 6

Using small teaspoon, drop cookie batter onto the cookie sheet.

Step 7

TURN OVEN OFF (don't forget this step)! Put in oven and forget until the next morning. DO NOT OPEN THE OVEN DOOR UNTIL MORNING! NO PEEKING!
