Mary's Favorite Pastry
I'm not sure who Mary is (apparently a CSA member), but she sure likes this pastry. This recipe, as you may have guessed, is originally from the Celiac Sprue Association website (http://www.csaceliacs....).
*EnerG Foods® Rice flour is a must for this recipe; Asian style rice flour is too fine, and will require additional shortening.
Ingredients
- 2 Tablespoons potato flour
- 7/8 cup white rice flour, EnerG Foods®*
- 1/4 teaspoon salt
- 1/4 teaspoon sugar
- 1/3 cup Crisco® solid
Directions
- Step 1
Mix dry ingredients.
- Step 2
Cut in the shortening until pieces are pea size.
- Step 3
Chill, bowl and all, in freezer for a few minutes.
- Step 4
Sprinkle in 2-5 Tablespooons ice water and fluff with a fork.
- Step 5
Adequate water has been added when a small amount of pastry holds together when squeezed.
- Step 6
Grease 8 1/2 inch pan.
- Step 7
Roll out pastry to size or press into pan.
- Step 8
Use oven temperature appropriate for pie filling.
