Easy Mint Patties

They're tasty, and they give you good breath. Originally from the Celiac Sprue Association website (http://www.csaceliacs....).

Ingredients

  • 1/4 c light corn syrup
  • 1 t GF peppermint extract
  • 1/4 c butter, softened
  • 1 to 2 drops desired vegetable food
  • 4 3/4 c sifted powdered sugar (about 1 pound)
  • coloring

Directions

Step 1

Combine light corn syrup, softened butter and Peppermint extract.

Step 2

Add sugar, about 1 cup at a time, stirring until well combined.

Step 3

Stir desired food coloring into mixture.

Step 4

Shape candy mixture into 1-inch balls.

Step 5

Place the balls 2-inches apart on a baking sheet lined with waxed paper. Gently flatten each ball with the tines of a fork.

Step 6

Let candy stand at room temperature about 3 hours or until dry.

Step 7

Store tightly covered in the refrigerator.
