Coconut Date Cookies

I'm a huge coconut fan, so it's hard to go wrong with this recipe. Originally from the Celiac Sprue Association website (http://www.csaceliacs....).

Ingredients

  • 1/2 c sugar
  • 1/2 lb dates, cut up
  • 3 T shortening
  • 1 1/2 c walnuts, chopped
  • 1 egg
  • 1 c grated coconut

Directions

Step 1

Cream the sugar, shortening and the egg very well.

Step 2

Add the dates, walnuts and coconut; mix well.

Step 3

Drop by the teaspoonful, 2 inches apart, onto a greased cookie sheet.

Step 4

Preheat oven to 350 degrees.

Step 5

Bake for 15 minutes.

Step 6

Watch the color and remove the cookies from the oven when they are golden brown. Do not over bake.

Step 7

Remove cookies from the cookie sheet when cool.
