Chocolate Mousse Pie

A good Chocolate Mouse is something I've been craving since I was sprued. Originally from the Celiac Sprue Association (http://www.csaceliacs....).

Serve it in little glass desert cups or put it in a chocolate crumb crust for a very chocolaty pie! This is a great make-ahead desert.

Ingredients

  • 1 teaspoon unflavored gelatin
  • 1/4 c cocoa
  • 1 T boiling water
  • 1 c whipped cream, well chilled
  • 2 T cold water
  • 1 teaspoon GF vanilla
  • 1/2 c white sugar

Directions

Step 1

Sprinkle gelatin into cold water in a small bowl and let stand one minute to soften.

Step 2

Add boiling water and stir until gelatin is completely dissolved and mixture is clear.

Step 3

Combine sugar and cocoa in small chilled bowl

Step 4

Add whip cream and vanilla. Beat 30 seconds on low speed or until smooth, then beat 1 minute on medium speed or until stiff peaks form.

Step 5

Gradually add gelatin mixture and beat until blended.

Step 6

Pour into cooled glass cups or chocolate crumb crust.

Step 7

Spread with more whipping cream and garnish with a chocolate cookie or chocolate candy if desired. Chill for 2 hours before serving.
