Almond Torte

Ingredients
- 6 eggs, separated
- 1 c sugar, divided
- 1 1/2 c grated almonds
- 1 c cold mashed potatoes
- Juice and rind of 1 lemon
Directions
- Step 1
Beat the egg yolks until light and lemon-colored.
- Step 2
Gradually add 1/2 cup sugar, a small amount at a time; continue beating for approximately 10 minutes.
- Step 3
Add the grated almonds, lemon juice, lemon rind and the mashed potatoes. Beat until well blended.
- Step 4
In a separate bowl, beat the egg whites until stiff; gradually add the remaining 1/2 cup of sugar; continue beating until the egg whites are stiff but not dry. Fold the stiffly beaten egg whites into the yolk mixture.
- Step 5
Grease well and dust with potato starch a 10-inch tube pan. Pour the batter into the pan.
- Step 6
Bake at 325 degrees for 45 to 60 minutes. Check with a pick for doneness.
