Almond Cake

A quick and fairly healthy desert. Since it doesn't have any butter, and very little sugar, you don't have to feel guilty taking a second helping.

The recipe is originally from the Celiac Sprue Association website. The original can be found at: http://www.csaceliacs.... It's great served with a fruit salad.

Ingredients

  • 3 eggs, separated
  • 2/3 c sugar
  • 1/4 c potato starch, sifted
  • 1/2 c orange juice
  • 1/2 t cinnamon
  • 1 3/4 c ground blanched almonds

Directions

Step 1

Beat the egg yolks and sugar until the mixture is thick and fluffy. Beat in alternately the potato starch and orange juice. Add the almonds and cinnamon; mix well.

Step 2

In a separate bowl, beat the egg whites until stiff but not dry; fold the beaten egg whites into the yolk mixture.

Step 3

Grease and dust with potato starch an 8-inch spring-form pan.

Step 4

Preheat oven to 325 degrees. Bake for 35 to 40 minutes. The cake is done when a toothpick inserted into the center, comes out clean.
