Lefse (a potato pancake or flat bread)

Recipe from the Celiac Sprue Association website. The original can be found at: http://www.csaceliacs.... Variations: substitute buttermilk for the cream and add one teaspoon of ground nutmeg. One can also increase the sugar, add vanilla and serve with cinnamon or honey.

Ingredients

  • 4 c potatoes, run through a ricer
  • 1/3 c solid shortening
  • 1/2 t salt
  • 1 1/2 c cream, heated
  • 1 t sugar
  • 2 1/4 c GF baking mix

Directions

Step 1

Potatoes can be smashed or diced.

Step 2

Mix together hot potatoes, shortening, cream, sugar and salt.

Step 3

When cooled, add about one and one half cups of the baking mix.

Step 4

Use remaining flour to coat each dollop of dough, which is rolled out as thin as possible and then, baked on a griddle or a pan until brown. Use corn oil for the griddle.

Step 5

Serve with fruits, seasoned vegetables or herbed butter with syrup.
