Pineapple Breakfast Cake

Ingredients

  • 4 eggs
  • 1 t GF vanilla
  • 5 oz GF bread (broken into pieces)
  • 1/3 c white sugar
  • 1 t cinnamon
  • 20 oz can crushed pineapple (Drain off 1/2 c juice)
  • 1 t baking soda
  • corn oil

Directions

Step 1

Place all ingredients in food processor or blender.

Step 2

Blend together well.

Step 3

Pour into 8 x 8-inch oiled pan.

Step 4

Sprinkle top with cinnamon.

Step 5

Bake at 350 degrees for 45 minutes.
