Buttermilk Pancakes

Ingredients
- 1 egg
- 3/4 c GF baking mix
- 1 1/2 t baking soda
- 1 T corn oil
- 1 t GF baking powder
- 1 c buttermilk
- 1/4 c tapioca flour
Directions
- Step 1
Beat egg in bowl with fork.
- Step 2
Sift together baking soda, baking powder and tapioca flour.
- Step 3
Mix all ingredients together and let stand for 5 minutes.
- Step 4
Fry on 375-degree skillet until done.
- Step 5
Best if flipped only once.
