Crunchy Garlic Chicken

Great recipe from "Derf" on Recipezaar.com. Originally from Betty Crocker. Sometimes is is hard to find gluten free cornflakes (because of the malt flavoring) but Whole Foods has a good brand. You may be able to find some online as well. When you are craving something fried and can't have most fried things, this is a really good treat. If you can't find GF corn flakes, you could also try crushed up potato chips as the breading. I've tried that with some other recipes in the past with good results.

Ingredients

  • 2 tablespoons butter or margarine, melted
  • 2 tablespoons milk
  • 1 tablespoon fresh chives, chopped
  • 1/2 teaspoon salt
  • 2 cloves fresh garlic, smashed
  • 2 cups corn flakes, crushed,about 1 cup
  • 3 tablespoons fresh parsley, chopped
  • 1/2 teaspoon paprika
  • 6 boneless skinless chicken breast halves, about 1 3/4 lbs
  • 2 tablespoons butter or margarine, melted

Directions

Step 1

Heat oven to 425f degrees.

Step 2

Spray rectangular pan 13 x 9 x 2 inches, with cooking spray.

Step 3

Mix 2 tablespoons butter, the milk, chives, salt and garlic powder.

Step 4

Mix crushed cereal, parsley and paprika.

Step 5

Dip chicken into milk mixture, then coat lightly and evenly with cereal mixture.

Step 6

Place in pan.

Step 7

Drizzle with 2 tablespoons butter.

Step 8

Bake uncovered 20 to 25 minutes or until chicken is no longer pink when centres of thickest pieces are cut.
