Roasted Cauliflower

What a delicious way to cook cauliflower. I don't even cauliflower, but when it is cooked like this, I love it. This is adapted from a recipe by "Rita" on Recipezaar.com. This is definitely a crowd pleaser. People always ask me for the recipe. The real kicker is that it is SO easy to make. You can even prep it a couple hours ahead of time. This might also be good with some finely shredded parmesan cheese on top but I haven't tried that yet.

Ingredients

  • 1 large cauliflower (trimmed and cut into bite size pieces)
  • 16 cloves garlic, peeled
  • 10 shallots, peeled
  • 1-2 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • 1/4-1/2 teaspoon black pepper
  • 1/4 cup olive oil, plus
  • more olive oil, to drizzle

Directions

Step 1

Mix oil, rosemary, salt, pepper, shallots and garlic together.

Step 2

Toss in cauliflower and place in a large casserole dish.

Step 3

Roast in a preheated over of 450 degrees for 20minutes.

Step 4

Give a toss and bake for 10 more minutes.
