Baked Pesto Chicken
This is a great recipe from adapted from Tish on Recipezaar.com. I like to use freshly made basil pesto but you can also use store bought varieties.
Ingredients
- 4 boneless skinless chicken breast halves
- 1/2 cup refrigerated basil pesto
- 2-3 plum tomatoes, thinly sliced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup feta cheese
- Italian Seasoning
- Salt
- Pepper
Directions
- Step 1
Preheat oven to 400 degrees F.
- Step 2
Line baking sheet with heavy-duty foil.
- Step 3
Aprinkle chicken with salt, pepper, and Italian Seasoning.
- Step 4
Place chicken and pesto in medium bowl; toss to coat.
- Step 5
Place chicken on prepared baking sheet.
- Step 6
Bake for 20-25 minutes or until chicken is no longer pink in center.
- Step 7
Remove from oven; top with tomatoes and cheese.
- Step 8
Bake for an additional 3-5 minutes or until cheese is melted.
- Step 9
Place under the broiler for one minute to brown the cheese.

I tried this chicken tonight using pesto I bought from the store. It was super easy to make and tasty! I'm going to eat the leftover chicken over salad later.
(I skipped the salt because the chicken I bought already had been injected with a salty broth.)
