Carne Asada Tacos
These are some tasty, taqueria style tacos that I found on allrecipes.com. Be forewarned: the sauce is extremely spicy. However, you can adjust the spiciness by reducing the number of jalapeno peppers.
Ingredients
- 1 1/2 pounds boneless beef top sirlion (or similar type of meet)
- 1/2 teaspoon salt
- 1 teaspoon freshly ground black pepper
- crushed red pepper to taste
- 1 lime
- 1 28 ounce can tomatillos (or an equivalent amount of fresh tomatillos)
- 2 fresh jalapeno peppers, seeded (this is the original amount called for by the recipe, but unless you like really spicy food, I suggest reducing it to 1 jalapeno)
- 4 tablespoons canola oil
- 1 10.5 ounce can of beef broth (make sure it is GF)
- 12 6 inch corn tortillas
- 1/2 large chopped onion
- 2 chopped tomatoes
- 1 avocado, peeled, pitted, and sliced
- 1 bunch fresh chopped cilantro
Directions
- Step 1
Place sliced meat into a bowl and season with black pepper, salt, and red pepper. Squeeze on lime juice and mix to make sure meat is evenly coated. Refrigerate for 30 minutes.
- Step 2
In a food processor, puree tomatillos and jalapeno peppers until the sauce is thick (takes about 20 seconds). I actually hand chopped them, and I highly recommend using a food processor instead.
- Step 3
Heat 1 teaspoon oil in a skillet and poor in tomatillo/jalapeno mixture. Cook, stirring frequently, for 5 minutes, then add beef broth. Reduce heat and simmer for 20-30 minutes, or until mixture coats a spoon.
- Step 4
Heat oil, and saute beef for about a minute. You should cook the meat in batches, rather than trying to cook everything all at once.
- Step 5
Heat tortillas in microwave according to instructions on package.
- Step 6
Combine tomatillo/jalapeno mixture and meat on top of a doubled up tortilla. Top with onions, avocado, and cilantro.
