Salmon with Wasabi

This is more of a meal than a recipe, but I wanted to share it none-the-less. While salmon is a great fish by itself, adding wasabi, rice, and some fresh greens makes it especially tasty.

Ingredients

  • 1 salmon filet
  • 1 lemon
  • 1 tube wasabi (you won't need it all)
  • 1 cup cilantro
  • 1 cucumber
  • 1 1/2 cups rice
  • 2 cups water
  • 1/8 cup butter sliced into small chunks

Directions

Step 1

Cook rice while preparing salmon. If you're not sure how to do this, refer to the instructions on the bag of rice (I always use a rice cooker)

Step 2

Preheat oven to 375 degrees

Step 3

Cut salmon filet into serving size pieces (3-6 depending on size)

Step 4

Lay salmon pieces in a casserole dish skin side down. Cover with slices of butter then squeeze on lemon juice.

Step 5

Bake salmon for 15-20 mniutes. Do not overcook!

Step 6

Slice cucumbers lengthwise into bit size pieces and chop cilantro.

Step 7

Lay salmon pieces on top of rice, add a dab of wasabi on the side, and top with cucumber slices and chopped cilantro.

Step 8

Enjoy!
