Mango Beef

This stir fry dish is excellent over rice!

Ingredients

  • 1/4 cup orange juice
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • dash pepper
  • 1 pound been sirloin sliced in thin strips
  • 1 tablespoon Chinese plum sauce (if you don't have plum sauce you can use a little apricot jam)
  • 2 ripe manges, peeled and sliced
  • 1 tablespoon oil
  • Optional: This recipe also goes well with white or green onions and cilantro!

Directions

Step 1

Combine 2 tablespoons orange juice with sugar, cornstarch, salt, and pepper. Mix with meat and let stand 15 minutes.

Step 2

Mix remaining orange juice with chutney and plum sauce. Chop half the mango and add to the sauce.

Step 3

Add beef and stir fry until browned. Add mango-plum sauce and stir fry until glazed and heated through.

Step 4

Place beef mixture in the center of a service plate, surround with remaining mango slices.

    This dish is wonderful. I have to admit, I'm a huge fan of mango, so I like just about anything with mango in it. That being said, this recipe is particularly good. Also, it doesn't really matter which meat you use. I've used pork as well as beef, and both are really good.
